I am new to freediving(started 2 days ago), but I would like to increase my static apnea time and eventually work up to a 50m DNF swim(I know not to rush anything but preferably sooner than later). I have a buddy and my current static apnea time is 3:03 with my current DNF being approximately 25m. I also have access to a 25m pool. Having looked into CO2 and O2 tables, what other workouts can I do to increase these numbers? I have also heard about walking apnea, but I am unsure as to how to do this. Please help!

Outside of attempted pool workouts I do plenty of cardio, but running gets monotonous and I need more variety.

Just my humble opinion. You can do static tables etc. but if you actually have a buddy and a pool go to the pool and train there. I think nothing will help as much as time you spend in the water.

What workouts/exercises can I do in the pool? Sorry, I'm very new to freediving and I'm completely lost.

Probably the most important thing for you at this stage is to work on your technique. That can yield enormous improvements in distance with no fins.

Also try some apnea walking and get used to moving with contractions.

A static of 3 minutes is plenty to reach 50 meters in DNF. If this is your main goal for now, I wouldn't focus so much on increasing your static but rather on your DNF technique. Go slow, focus on relaxation and saving energy, watch videos for technique. Also make sure you are weighted properly, it makes a tremendous difference if you don't have to waste energy on fixing your buoyancy.

I did my first freediving course last weekend too!!
Went to the pool today and did 25m no fins easy- but my dry breath hold is only 1:30 -2 max, no advice here but some comparison at least :)
